Description

A fresh and flavorful corn salsa perfect as a dip or side dish.


Ingredients

Scale
  • 24 ounces frozen corn (thawed)
  • ½ cup red onion finely chopped
  • 1 large roasted poblano pepper peeled (seeded, and finely chopped)
  • 2 jalapeño peppers stemmed (seeded, and finely chopped)
  • ¼ cup fresh cilantro finely chopped
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • to taste salt

Instructions

  1. Heat a skillet over medium-high heat.
  2. Add the corn and cook, stirring occasionally, until lightly charred, about 5 minutes.
  3. Remove from heat and let cool slightly.
  4. In a bowl, combine the corn, red onion, roasted poblano, jalapeños, cilantro, lemon juice, and lime juice.
  5. Season with salt to taste.
  6. Serve as a salsa or side dish.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
