A fresh and flavorful corn salsa perfect as a dip or side dish.
Ingredients

- 24 ounces frozen corn (thawed)
- ½ cup red onion finely chopped
- 1 large roasted poblano pepper peeled (seeded, and finely chopped)
- 2 jalapeño peppers stemmed (seeded, and finely chopped)
- ¼ cup fresh cilantro finely chopped
- 1 tbsp lemon juice
- 1 tbsp lime juice
- to taste salt
Instructions
- Heat a skillet over medium-high heat.
- Add the corn and cook, stirring occasionally, until lightly charred, about 5 minutes.
- Remove from heat and let cool slightly.
- In a bowl, combine the corn, red onion, roasted poblano, jalapeños, cilantro, lemon juice, and lime juice.
- Season with salt to taste.
- Serve as a salsa or side dish.

- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
