Description
This grilled chicken marinade is bursting with flavor and perfect for summer cookouts.
Ingredients
Scale
- 1 ½ pounds chicken breast, cut into cubes
- ¼ cup extra virgin olive oil
- ¼ cup fresh lemon juice
- 4 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper. The aroma should already feel warm and inviting.
- Add the chicken pieces and toss until every piece is well coated. This is where the magic begins.
- Cover and refrigerate for at least 30 minutes. For deeper flavor, marinate for up to 8 hours.
- Thread the chicken onto skewers or keep loose if cooking in a pan.
- Grill over medium-high heat for 10–12 minutes, turning occasionally, until cooked through and lightly charred.
Notes
- For best results, marinate the chicken overnight.
- This marinade can also be used with vegetables.
