Instructions
- Prepare the Cherries: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper. If using fresh cherries, pit and halve them. For frozen cherries, thaw and drain them well.
- Mix Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla and almond extracts.
- Combine Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Gently fold in the chocolate chunks and cherries.
- Shape the Cookies: Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Optionally, sprinkle a small pinch of salt on top of each cookie.
- Bake: Bake in the preheated oven for 10-12 minutes or until the edges are firm and the centers are set. Let cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
