Description

A delightful recipe for cherry chocolate chunk cookies that combines the sweetness of cherries with rich chocolate.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups cherries, pitted and halved
  • 1 1/2 cups chocolate chunks
  • 1/4 teaspoon almond extract (optional)
  • 1/2 cup chopped nuts (optional)
  • A pinch of salt for topping

Instructions

  1. Prepare the Cherries: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper. If using fresh cherries, pit and halve them. For frozen cherries, thaw and drain them well.
  2. Mix Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla and almond extracts.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Gently fold in the chocolate chunks and cherries.
  5. Shape the Cookies: Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Optionally, sprinkle a small pinch of salt on top of each cookie.
  6. Bake: Bake in the preheated oven for 10-12 minutes or until the edges are firm and the centers are set. Let cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

Notes

  • Chilling Dough: For thicker cookies, chill the dough for about 30 minutes before baking.
  • Chocolate: For a richer flavor, use dark chocolate chunks or chips.
  • Storage: Store cookies in an airtight container for up to a week. They also freeze well for up to three months.
  • Flavor Variations: Add a tablespoon of espresso powder for a mocha twist or replace cherries with dried versions for a chewy texture.
