Description
Delicious and flaky cheesy herb scones perfect for breakfast or as a snack.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cold unsalted butter, cubed
- 1 cup shredded cheddar cheese
- 1 tablespoon mixed dried herbs (such as thyme, oregano, and basil)
- 3/4 cup milk
- 1 egg (for egg wash)
- 1 tablespoon water
- Extra cheese and herbs for topping
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
- Cut in Butter: Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Add Cheese and Herbs: Stir in the shredded cheddar cheese and dried herbs.
- Incorporate Milk: Gradually add the milk, stirring with a fork until the dough comes together. Do not overmix.
- Form the Dough: Turn the dough onto a lightly floured surface. Gently knead it a few times until smooth. Pat the dough out to about 1-inch thickness.
- Cut Scones: Use a biscuit cutter to cut out scones from the dough. Place them on the prepared baking sheet.
- Prepare Egg Wash: In a small bowl, beat the egg with water to create an egg wash. Brush the tops of the scones with the egg wash.
- Top and Bake: Sprinkle a little extra cheese and herbs on top of each scone. Bake for 15-20 minutes, or until golden brown.
Notes
- Butter: Ensure that the butter is cold to create flaky layers in the scones.
- Cheese Variations: Feel free to use other cheeses such as mozzarella or gouda for a different flavor.
- Herbs: Fresh herbs can be used instead of dried; increase the quantity slightly for a stronger flavor.
- Freezing: These scones can be frozen before baking. Simply place them on a baking sheet, freeze until solid, then transfer to a zip-top bag. Bake from frozen, adding a few extra minutes to the cooking time.
