Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut in Butter: Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Add Cheese and Herbs: Stir in the shredded cheddar cheese and dried herbs.
  5. Incorporate Milk: Gradually add the milk, stirring with a fork until the dough comes together. Do not overmix.
  6. Form the Dough: Turn the dough onto a lightly floured surface. Gently knead it a few times until smooth. Pat the dough out to about 1-inch thickness.
  7. Cut Scones: Use a biscuit cutter to cut out scones from the dough. Place them on the prepared baking sheet.
  8. Prepare Egg Wash: In a small bowl, beat the egg with water to create an egg wash. Brush the tops of the scones with the egg wash.
  9. Top and Bake: Sprinkle a little extra cheese and herbs on top of each scone. Bake for 15-20 minutes, or until golden brown.
