Description

Ingredients

  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 12 small flour or corn tortillas (taco size)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup diced onion
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Tortillas: Lightly grease a muffin tin with olive oil. Gently press the tortillas into each muffin cup, forming a “cup” shape.
  3. Cook the Ground Beef:
    • In a skillet over medium heat, add olive oil and diced onions. Sauté until onions are translucent.
    • Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula.
    • Drain excess fat and return the skillet to the heat.
    • Stir in taco seasoning and a bit of water (as per seasoning packet instructions). Cook for another 2 minutes.
  4. Assemble the Cups:
    • Spoon the cooked beef mixture into each tortilla cup.
    • Top each with diced tomatoes and shredded cheddar cheese.
  5. Bake:
    • Place the muffin tin in the preheated oven.
    • Bake for about 10-12 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove from oven and allow to cool slightly.
    • Garnish with fresh cilantro.
    • Serve warm.
