Description

Delicious carne asada tacos topped with fresh ingredients and a burst of citrus flavor.


Ingredients

  • 1 to 2 pounds Flank Steak or Skirt Steak
  • 1/2 cup Fresh orange juice
  • 1/4 cup Lime juice
  • 4 cloves Freshly minced garlic
  • 1 bunch Fresh cilantro, chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Olive oil or avocado oil
  • 2 tablespoons Apple cider vinegar or non-alcoholic cerveza
  • 8 small Corn Tortillas
  • 1 Diced White Onion
  • 1 bunch More fresh cilantro for garnish
  • 1 cup Salsa verde or simple red mild salsa
  • 4 Lime wedges
  • Optional: creamy guacamole or cotija cheese

Instructions

  1. In a medium bowl or a large resealable plastic bag, combine all your marinade ingredients: orange juice, lime juice, minced garlic, chopped cilantro, cumin, chili powder, smoked paprika, salt, black pepper, olive oil, and your non-alcoholic flavor boost. Whisk or shake to combine thoroughly.
  2. Place your flank or skirt steak into the resealable bag with the marinade or in a shallow dish, ensuring the beef is fully coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2 to 4 hours.
  3. Remove the beef from the marinade and pat it dry with paper towels. Discard any leftover marinade. Heat your grill or a large cast-iron skillet over high heat. Cook the steak for about 3-5 minutes per side for medium-rare to medium doneness. Transfer the steak to a cutting board and tent it loosely with foil to rest for 5-10 minutes.
  4. While the carne asada is resting, finely dice your white onion and chop your fresh cilantro. Prepare your salsa and lime wedges. Warm your corn tortillas on a dry skillet or comal over medium heat for about 30 seconds per side.
  5. After the beef has rested, slice it against the grain into thin strips. You can chop the strips into smaller pieces for easier taco assembly.
  6. Grab your warm tortillas, layer a generous amount of the sliced carne asada onto each tortilla, top with diced white onion and fresh cilantro, add a spoonful of salsa, and finish with a squeeze of fresh lime juice before serving.
