Description

This delicious pumpkin banana bread is perfect for breakfast or a snack!


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp pumpkin pie spice
  • 1 ¼ tsp baking powder
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 2 medium bananas (mashed)
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 tsp vanilla extract (optional)
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9×5-inch loaf pan with parchment paper.
  3. In a medium bowl, whisk together the flour, pumpkin pie spice, and baking powder.
  4. In a large bowl, add the eggs and sugar, and mix until combined.
  5. Mix in the vegetable oil, mashed bananas, pumpkin puree, and vanilla extract, if using.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the chopped walnuts if using.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
