This delicious pumpkin banana bread is perfect for breakfast or a snack!
Ingredients

- 2 cups all-purpose flour
- 2 tsp pumpkin pie spice
- 1 ¼ tsp baking powder
- ½ cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 2 medium bananas (mashed)
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 2 tsp vanilla extract (optional)
- ½ cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, pumpkin pie spice, and baking powder.
- In a large bowl, add the eggs and sugar, and mix until combined.
- Mix in the vegetable oil, mashed bananas, pumpkin puree, and vanilla extract, if using.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For best results, use ripe bananas for better flavor.
- This bread can be stored in an airtight container for up to 5 days.
