Ingredients

  • 2 ripe bananas, mashed
  • ½ cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chocolate chips (optional)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Grease or line an 8-inch square baking pan with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the melted butter to the mashed bananas. Stir in the brown sugar, egg, and vanilla extract until well combined.
  4. In another bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. If desired, fold in chocolate chips and/or nuts for added flavor and texture.
  7. Spread the batter evenly into the prepared baking pan.
  8. Place the pan in the preheated oven and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove from the oven and allow the blondies to cool in the pan for about 20 minutes before cutting.
