Description

Deliciously warm apple tortilla wraps with a sweet glaze.


Ingredients

  • 2 large apples, peeled and thinly sliced
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter (for apple filling)
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1/2 teaspoon vanilla extract
  • 4 soft flour tortillas
  • 2 tablespoons butter (for glaze)
  • 2 tablespoons brown sugar (for glaze)

Instructions

  1. In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the sliced apples, brown sugar, cinnamon, nutmeg, and a pinch of salt. Stir and let cook for 6-8 minutes until apples are soft but not mushy.
  2. In a small bowl, mix cornstarch with water and stir into the apple mixture. Simmer for another 1-2 minutes to thicken. Remove from heat and stir in vanilla extract.
  3. Lay each tortilla flat and spoon a line of apple filling down the center. Fold the bottom up slightly and roll tightly into a wrap. Secure with a toothpick if needed.
  4. In a small pan, melt 2 tablespoons butter with 2 tablespoons brown sugar until smooth. Brush or drizzle this over the rolled wraps.
  5. Heat a non-stick skillet and toast the wraps seam-side down until golden brown. Flip and toast all sides.
  6. Serve warm, optionally dusted with powdered sugar or topped with vanilla ice cream.
